In a food processor, combine cooked beets, black beans, oats, onion, garlic cloves, ground cumin, smoked paprika, salt, and black pepper. Pulse until well combined but still slightly chunky.

Form the mixture into patties and place on a baking sheet lined with parchment paper. Refrigerate for 10 minutes.

Preheat grill or grill pan over medium heat. Cook the patties for 4-5 minutes per side, or until heated through and grill marks appear.

Toast the burger buns on the grill for 1-2 minutes.

Assemble the burgers by placing a patty on the bottom half of each bun. Top with lettuce, tomato, red onion, and avocado. Place the top half of the bun on the ingredients.
