Cook the rice noodles according to package instructions. Drain and set aside.

In a small bowl, whisk together peanut butter, soy sauce, lime juice, minced garlic, and grated ginger to make the peanut sauce.

Heat vegetable oil in a large skillet over medium heat. Add chopped red bell pepper, shredded carrots, and sliced cucumber. Stir-fry for 3-4 minutes until vegetables are tender-crisp.

Add cooked rice noodles to the skillet and pour the peanut sauce over them. Toss everything together until well coated.

Remove from heat and garnish with sliced green onions, chopped fresh cilantro, roasted peanuts, and sesame seeds.
