  2. In a small bowl, mix peanut butter, soy sauce, lime juice, garlic, and ginger.
  3. Add the peanut sauce to the pan and stir-fry for 2 minutes.
  4. Remove from heat and let it rest for 5 minutes.
  5. Meanwhile, julienne the carrot, red bell pepper, and cucumber.
  6. Place a lettuce leaf on a plate and spoon the cauliflower rice mixture onto it.
  7. Top with julienned vegetables, fresh cilantro, and roasted peanuts.
  8. Roll the lettuce leaf to form a wrap.
  9. Repeat with the remaining ingredients.
  10. Serve and enjoy!
