Thai Peanut Cauliflower Rice Wraps

In a large pan, stir-fry cauliflower rice until tender.

In a small bowl, mix peanut butter, soy sauce, lime juice, garlic, and ginger.

Add the peanut sauce to the pan and stir-fry for 2 minutes.

Remove from heat and let it rest for 5 minutes.

Meanwhile, julienne the carrot, red bell pepper, and cucumber.

Place a lettuce leaf on a plate and spoon the cauliflower rice mixture onto it.

Top with julienned vegetables, fresh cilantro, and roasted peanuts.

Roll the lettuce leaf to form a wrap.

Repeat with the remaining ingredients.
