Olive pastries are a popular street food in Syria and are often enjoyed with a cup of hot tea.

  1. In a mixing bowl, combine the all-purpose flour, olive oil, water, and salt. Knead the dough until it becomes smooth and elastic.
  2. Cover the dough with a damp cloth and let it rest for 10 minutes.
  3. In a separate bowl, mix together the chopped olives, parsley, onion, ground cumin, ground coriander, ground black pepper, and lemon juice.
  4. Preheat the oven to 180°C (350°F).
  5. Divide the dough into small balls and roll each ball into a thin circle.
  6. Place a spoonful of the olive mixture in the center of each dough circle.
  7. Fold the dough over the filling to form a half-moon shape and seal the edges.
  8. Brush the pastries with olive oil and sprinkle sesame seeds on top.
  9. Place the pastries on a baking sheet and bake for 20 minutes, or until golden brown.
  10. Serve the Syrian Olive Pastries warm.
