Sweet & Sour Meatless Meatballs

Preheat the oven to 375°F (190°C).

In a large bowl, combine the meatless ground meat, breadcrumbs, onion, garlic, soy sauce, salt, and black pepper. Mix well.

Shape the mixture into meatballs and place them on a baking sheet lined with parchment paper.

Bake in the preheated oven for 20 minutes, or until the meatballs are cooked through.

In a large skillet, heat the vegetable oil over medium heat. Add the green bell pepper and cook for 2-3 minutes, until slightly softened.

In a small bowl, whisk together the rice vinegar, ketchup, brown sugar, cornstarch, water, and pineapple chunks.

Add the sauce mixture to the skillet with the bell pepper. Cook for 2-3 minutes, until the sauce thickens.

Add the baked meatballs to the skillet and toss to coat them in the sauce.

Cook for an additional 2-3 minutes, until the meatballs are heated through.
