Sweet Potato Rosti
Rosti is a traditional Swiss dish made from grated potatoes, but this recipe puts a sweet twist on it by using sweet potatoes instead.

Grate the sweet potatoes and onion.

Squeeze out excess moisture by placing the grated sweet potatoes and onion in a clean kitchen towel and twisting it tightly.

In a large bowl, mix the grated sweet potatoes, onion, all-purpose flour, salt, and black pepper.

Heat olive oil in a large non-stick skillet over medium heat.

Take a handful of the sweet potato mixture and shape it into a patty. Place it in the skillet and flatten it with a spatula.

Cook for about 4-5 minutes on each side, or until golden brown and crispy.

Repeat with the remaining sweet potato mixture.
