Sweet Potato & Pear Soup
Sweet potatoes are not actually related to regular potatoes. They are part of the morning glory family.
This is vegan and gluten free recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Peel and chop the sweet potatoes, pears, and onion.

Heat olive oil in a large pot over medium heat.

Add the chopped onion and cook until softened.

Add the sweet potatoes and pears to the pot and cook for a few minutes.

Pour in the vegetable stock and bring to a boil.

Reduce heat and simmer for 20 minutes, or until the sweet potatoes are tender.

Remove from heat and let the soup cool slightly.

Use an immersion blender or regular blender to puree the soup until smooth.

Return the soup to the pot and stir in the coconut milk, cinnamon, nutmeg, salt, and black pepper.

Cook for an additional 5 minutes, stirring occasionally.
