Preheat the oven to 400°F (200°C).

Peel and slice the carrots into sticks.

In a bowl, mix the pomegranate juice, honey, olive oil, salt, and black pepper.

Toss the carrots in the glaze mixture until well coated.

Place the carrots on a baking sheet and roast for 20 minutes, or until tender.

Remove from the oven and let them rest for 5 minutes.
