Sweet Potato Patties
Sweet potatoes are not actually potatoes. They belong to the morning glory family and are rich in vitamins A and C.
This is vegan and gluten free recipe. Dish can be prepared in 40 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 8.

Peel and boil the sweet potatoes until tender. Mash them in a bowl.

Finely chop the onion, garlic, and parsley.

In a pan, heat olive oil and sauté the chopped onion and garlic until golden.

Add the sautéed onion, garlic, parsley, breadcrumbs, salt, and black pepper to the mashed sweet potatoes. Mix well.

Shape the mixture into patties and refrigerate for 5 minutes.

Heat olive oil in a pan and fry the patties on both sides until golden brown.

Serve hot with your favorite dipping sauce.
