  1. Preheat the oven to 180°C (350°F). Peel and dice the sweet potatoes.
  2. Steam the sweet potatoes until they are soft, then mash them.
  3. In a large bowl, combine the mashed sweet potatoes, rolled oats, almond flour, maple syrup, coconut oil, ground cinnamon, baking powder, vanilla extract, and salt. Mix well.
  4. Line a loaf pan with parchment paper and transfer the mixture into the pan.
  5. Bake in the preheated oven for 45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  6. Remove from the oven and let it rest for 10 minutes.
  7. Slice and serve.
