Heat oil in a pan and add ginger, garlic, and green chilies. Saute for a minute.

Add turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt. Mix well.

Add potatoes, cauliflower, carrots, peas, and water. Cover and simmer for 15 minutes or until the vegetables are cooked.

Garnish with fresh coriander leaves.
