Preheat the oven to 375°F (190°C).

Peel and dice the sweet potatoes. Boil them until tender, then drain and mash.

In a large bowl, combine the mashed sweet potatoes, all-purpose flour, instant yeast, garlic powder, salt, and olive oil. Mix well.

Gradually add water to the mixture, kneading until a soft dough forms.

Place the dough on a floured surface and knead for about 5 minutes.

Divide the dough into 12 equal portions and roll each portion into a rope.

Tie each rope into a knot and place on a baking sheet lined with parchment paper.

Bake in the preheated oven for 15-20 minutes, or until golden brown.

Remove from the oven and let the knots rest for 10 minutes.
