Peel and cut the sweet potatoes and apples into thin slices.

Heat vegetable oil in a large pan over medium heat.

Add the onion, garlic, and ginger to the pan and cook until fragrant.

Add the sweet potatoes and cook for about 10 minutes, until they start to soften.

Add the apples, soy sauce, maple syrup, salt, and pepper to the pan and stir fry for another 5 minutes.

Remove from heat and let it rest for 5 minutes.
