In a large pot, heat some oil over medium heat and sauté the onion, garlic, and ginger until fragrant.

Add the curry powder and cayenne pepper, and cook for another minute.

Add the sweet potatoes, peanut butter, vegetable broth, and coconut milk to the pot. Stir well to combine.

Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the sweet potatoes are tender.
