  2. In a mixing bowl, combine sunflower seeds, almond flour, coconut flour, baking powder, and salt.
  3. In a separate bowl, mix together maple syrup, coconut oil, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until well combined.
  5. Scoop tablespoon-sized portions of the dough onto a baking sheet lined with parchment paper.
  6. Flatten each cookie slightly with the back of a spoon.
  7. Bake for 10-12 minutes or until the edges are golden brown.
