  2. In a large pot, heat olive oil over medium heat. Add diced onion, carrot, celery, and minced garlic. Cook until vegetables are tender.
  3. Stir in tomato paste, cumin, and coriander. Cook for another minute.
  4. Add lentils and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.
  5. Using an immersion blender or a regular blender, blend the soup until smooth.
  6. Stir in lemon juice, salt, and black pepper.
  7. For the grilled garlic bread, preheat the grill or oven to medium-high heat. Slice the baguette into diagonal pieces. Rub each slice with a clove of garlic and drizzle with olive oil.
  8. Grill or bake the bread slices until golden and crispy.
  9. Serve the lentil soup hot with grilled garlic bread on the side. Garnish with fresh parsley.
