  1. In a small bowl, whisk together soy sauce, sesame oil, honey, cornstarch, and water. Set aside.
  2. Heat cooking oil in a large skillet or wok over medium-high heat.
  3. Add garlic and ginger and cook for 1 minute until fragrant.
  4. Add tofu and stir-fry for 3-4 minutes until lightly browned.
  5. Add vegetables (broccoli, bell peppers, carrots, snap peas, mushrooms) and stir-fry for 4-5 minutes until crisp-tender.
  6. Pour the sauce mixture over the vegetables and tofu. Stir well to coat.
  7. Cook for an additional 2-3 minutes until the sauce thickens.
  8. Season with salt and black pepper to taste.
  9. Remove from heat and let it rest for 5 minutes.
  10. Serve hot and enjoy!
