  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the sweet potatoes. Prick them with a fork, then place them on a baking sheet and bake for 40-45 minutes, or until tender.
  3. While the sweet potatoes are baking, heat olive oil in a pan and sauté onions and bell peppers until softened.
  4. Add black beans, corn kernels, chili powder, cumin powder, paprika, salt, and black pepper to the pan. Cook for an additional 5 minutes.
  5. Once the sweet potatoes are done, remove them from the oven and let them rest for 5 minutes.
  6. Slice each sweet potato lengthwise and gently fluff the flesh with a fork.
  7. Spoon the black bean mixture over the sweet potatoes and top with cheddar cheese.
  8. Return the stuffed sweet potatoes to the oven and bake for an additional 5 minutes, or until the cheese has melted.
  9. Serve hot and enjoy!
