Stuffed Sweet Potatoes
Sweet potatoes are a good source of fiber, vitamins, and minerals. They are also lower in calories compared to regular potatoes.

Preheat the oven to 400°F (200°C).

Wash and scrub the sweet potatoes. Prick them with a fork, then place them on a baking sheet and bake for 40-45 minutes, or until tender.

While the sweet potatoes are baking, heat olive oil in a pan and sauté onions and bell peppers until softened.

Add black beans, corn kernels, chili powder, cumin powder, paprika, salt, and black pepper to the pan. Cook for an additional 5 minutes.

Once the sweet potatoes are done, remove them from the oven and let them rest for 5 minutes.

Slice each sweet potato lengthwise and gently fluff the flesh with a fork.

Spoon the black bean mixture over the sweet potatoes and top with cheddar cheese.

Return the stuffed sweet potatoes to the oven and bake for an additional 5 minutes, or until the cheese has melted.
