Bulgur and Pumpkin Pilaf

Heat olive oil in a large pan over medium heat. Add the onion and garlic, and sauté until softened.

Add the pumpkin, cinnamon, cumin, salt, and black pepper to the pan. Cook for 5 minutes, stirring occasionally.

Add the bulgur and vegetable broth to the pan. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the bulgur is tender and the liquid is absorbed.

Remove from heat and let the pilaf rest for 5 minutes. Fluff the pilaf with a fork.

Stir in the parsley and lemon juice. Serve hot.
