  1. Soak the glass noodles in warm water for 10 minutes or until softened. Drain and set aside.
  2. Heat vegetable oil in a wok or large pan over medium heat. Add minced garlic and sauté until fragrant.
  3. Add sliced onion, carrot, bell pepper, cabbage, and bean sprouts to the wok. Stir-fry for 2-3 minutes or until the vegetables are slightly tender.
  4. Push the vegetables to one side of the wok and add the soaked glass noodles. Stir-fry for 2 minutes.
  5. In a small bowl, mix together soy sauce, dark soy sauce, sugar, and salt. Pour the sauce over the noodles and vegetables. Stir-fry for another 2 minutes or until everything is well combined.
  6. Garnish with chopped spring onion and cilantro.
  7. Serve the stir-fried vegetarian glass noodles hot with lime wedges on the side.
