Prepare the artichokes by trimming the stems and removing any tough outer leaves. Cut off the top third of each artichoke and trim the sharp tips of the remaining leaves.

Place the artichokes in a steamer basket and add water to the pot. Squeeze the lemon juice over the artichokes and add the lemon halves to the pot.

Cover the pot and steam the artichokes for 30 minutes, or until the leaves are tender and easily pulled off.

While the artichokes are steaming, prepare the curry dipping sauce. In a small bowl, whisk together the curry powder, Greek yogurt, minced garlic, salt, and olive oil.

Remove the steamed artichokes from the pot and let them rest for 5 minutes.

Serve the steamed artichokes with the curry dipping sauce on the side.
