Veggie burgers have been around since the early 1980s and have gained popularity as a delicious and healthy alternative to meat burgers.

This is vegan, gluten free and high protein recipe. Dish can be prepared in 40 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 16.

  1. Rinse and cook the quinoa according to package instructions.
  2. In a pan, heat 1 tablespoon of olive oil and sauté the onion, garlic, and mushrooms until softened.
  3. In a large bowl, mash the black beans until mostly smooth. Add the cooked quinoa, sautéed mixture, breadcrumbs, egg, cumin, paprika, salt, and pepper. Mix well.
  4. Form the mixture into patties and refrigerate for 10 minutes.
  5. Heat the remaining olive oil in a pan or grill pan over medium heat. Cook the patties for about 4-5 minutes on each side, until browned and heated through.
  6. Toast the burger buns and assemble the burgers with lettuce, tomato, avocado, and the veggie patties.
  7. Serve and enjoy!
