  2. Place the grated vegetables in a colander and sprinkle with salt. Let them sit for 10 minutes to draw out excess moisture.
  3. Squeeze the vegetables to remove any remaining moisture.
  4. In a large bowl, combine the grated vegetables, all-purpose flour, cornmeal, egg, milk, salt, and black pepper. Mix well.
  5. Heat vegetable oil in a skillet over medium heat.
  6. Spoon the batter into the skillet, forming small fritters.
  7. Cook for 3-4 minutes on each side, or until golden brown.
  8. Remove the fritters from the skillet and place them on a paper towel to drain excess oil.
