Rinse split peas under cold water.

In a large pot, heat olive oil over medium heat. Add chopped onions, carrots, celery, and minced garlic. Cook for 5 minutes until vegetables soften.

Add split peas, vegetable broth, bay leaves, thyme, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for 45-60 minutes, or until split peas are soft and soup is thickened.

Remove bay leaves and thyme sprigs from the soup. Use an immersion blender or transfer soup to a blender in batches, and puree until smooth.

Return the soup to the pot and heat over low heat for another 5 minutes to warm through. Adjust seasoning if needed.
