Rinse the split peas under cold water.

In a large pot, heat olive oil over medium heat. Add onions, garlic, carrots, and celery. Sauté until vegetables are tender.

Add split peas, vegetable broth, bay leaves, thyme, salt, and black pepper to the pot. Bring to a boil.

Reduce heat to low, cover, and simmer for 45-60 minutes or until the split peas are soft.

Remove bay leaves and let the soup rest for 5 minutes.

Use an immersion blender or a regular blender to puree the soup until smooth.

If the soup is too thick, add water to reach the desired consistency.
