Wash the spinach thoroughly and blanch it in boiling water for 2 minutes. Drain and set aside.

In a pan, heat olive oil and sauté chopped onion and minced garlic until golden brown.

Add the blanched spinach to the pan and cook for another 3-4 minutes.

Season with salt and black pepper.

Remove from heat and let it cool slightly.

Transfer the mixture to a blender and blend until smooth.

Add lemon juice and blend again.

Serve the spinach puree in bowls and garnish with a dollop of Greek yogurt.
