Spinach Empanadas
Empanadas are a popular dish in many Latin American countries and can be filled with a variety of ingredients, both savory and sweet.
This is vegan and gluten free recipe. Dish can be prepared in 60 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Heat olive oil in a pan and sauté onion and garlic until translucent.

Add spinach and cook until wilted.

Season with salt, black pepper, paprika, and cumin.

Pour in vegetable broth and simmer until most of the liquid has evaporated.

Preheat the oven to 375°F (190°C).

Roll out the empanada dough and cut into circles.

Spoon the spinach filling onto each dough circle.

Fold the dough over the filling and seal the edges.

Place the empanadas on a baking sheet and brush with olive oil.

Bake for 20 minutes or until golden brown.

Allow to rest for 10 minutes before serving.
