Spinach and Pea Soup
Spinach is a great source of iron and vitamin C, while peas are rich in fiber and protein.

Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until onion is translucent.

Add spinach and peas, and cook for 5 minutes.

Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.

Season with salt and black pepper.

Remove from heat and let it cool slightly.

Blend the soup until smooth using an immersion blender or a regular blender.

Return the soup to the pot and reheat if necessary.

Stir in lemon juice.

Serve hot, garnished with fresh cilantro.
