Cut the bitter gourd into thin slices and soak them in saltwater for 10 minutes.

Heat oil in a pan and fry the bitter gourd slices until they turn crispy. Set aside.

In the same pan, add mustard seeds and let them splutter.

Add chopped onions and curry leaves. Saute until the onions turn golden brown.

Add chopped tomatoes and cook until they become mushy.

Add tamarind paste, turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well.

Add water and let the gravy simmer for 10 minutes.

Add the fried bitter gourd slices and cook for another 5 minutes.

Serve hot with rice or roti.
