Spinach and chickpeas are both excellent sources of iron, making this curry a nutritious and delicious meal.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 14.

Heat vegetable oil in a pan over medium heat.

Add chopped onion, minced garlic, and grated ginger. Sauté until onions are translucent.

Add turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well.

Add chopped tomatoes and cook until they soften.

Add chickpeas and spinach. Stir well.

Pour in coconut milk and simmer for 15-20 minutes.

Garnish with fresh coriander.

Serve hot with rice or naan bread.
