Heat oil in a pan and add chopped onions, garlic, ginger, and green chilies. Sauté until onions turn translucent.

Add cauliflower florets and cook for 5 minutes until they become slightly tender.

Add chopped tomatoes, turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well and cook for another 5 minutes.

Add spinach leaves and cook until they wilt down.

Sprinkle garam masala and mix well. Cook for 2 more minutes.

Garnish with fresh coriander leaves.
