Spicy Wheatberry Salad
Wheatberries are the whole, unprocessed kernels of wheat and are a great source of fiber and nutrients.

Cook the wheatberries according to package instructions. Drain and set aside.

While the wheatberries are cooking, dice the red bell pepper, cucumber, red onion, jalapeno pepper, and chop the fresh cilantro.

In a large bowl, combine the cooked wheatberries, diced vegetables, and chopped cilantro.

In a small bowl, whisk together lime juice, olive oil, cumin powder, chili powder, salt, and black pepper.

Pour the dressing over the wheatberry mixture and toss until well coated.

Let the salad rest for 10 minutes to allow the flavors to meld.
