Heat olive oil in a large pot over medium heat. Add chopped onions and minced garlic, sauté for 5 minutes until softened.

Add tomatoes, vegetable stock, red chili flakes, paprika, cumin powder, salt, and black pepper. Bring to a boil and then reduce heat to simmer for 20 minutes.

Use an immersion blender or transfer the soup to a blender and blend until smooth.

Return the soup to the pot and simmer for an additional 5 minutes.

Serve hot, garnished with fresh basil leaves and croutons.
