Cook the black quinoa according to the package instructions.

Heat the olive oil in a large skillet over medium heat.

Add the red onion, garlic, and red chili pepper to the skillet. Sauté until the onion is translucent and fragrant.

Add the carrots, ground cumin, salt, and black pepper to the skillet. Sauté until the carrots are tender.

Stir in the cooked black quinoa and lemon juice. Cook for an additional 2-3 minutes.

Remove from heat and garnish with fresh cilantro.
