In a large pot, boil the sweet potatoes until tender. Drain and set aside.

In the same pot, heat the coconut milk and vegetable broth over medium heat.

Add the red curry paste, garlic, ginger, lime juice, and salt. Stir well.

Add the cooked sweet potatoes to the pot and simmer for 10 minutes.

Use an immersion blender to puree the soup until smooth.

Serve hot, garnished with cilantro and red chili flakes.
