Peel and cut the potatoes into cubes.

Heat oil in a pan and fry the potatoes until golden brown. Remove and keep aside.

In the same pan, add more oil if needed and sauté the onions until translucent.

Add ginger, garlic, and green chili. Sauté for a minute.

Add tomatoes and cook until they turn soft.

Add turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt. Mix well.
