Spicy Potatoes & Cauliflower
Potatoes and cauliflower are commonly used in Indian cuisine and this dish combines the flavors of both vegetables with a spicy twist.

Peel and cut the potatoes into small cubes. Cut the cauliflower into florets.

Heat oil in a pan and add chopped onion, garlic, and ginger. Saute until golden brown.

Add the chopped tomato and cook until soft.

Add the spices (turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt) and cook for a minute.

Add the potatoes and cauliflower to the pan. Mix well to coat the vegetables with the spices.

Cover and cook for 15-20 minutes until the vegetables are tender.

Garnish with fresh coriander leaves.

Serve hot with rice or roti.
