Cook the rice noodles according to the package instructions. Drain and rinse with cold water.

In a large mixing bowl, combine the cooked noodles, bell pepper, carrot, cucumber, red onion, fresh cilantro, and fresh mint leaves.

In a small bowl, whisk together lime juice, soy sauce, sesame oil, minced garlic, chopped red chili, and maple syrup.

Pour the dressing over the noodle mixture and toss until well combined.
