  2. Cut tofu into small cubes and set aside.
  3. In a wok or large skillet, heat vegetable oil over medium heat. Add garlic, ginger, and scallions. Stir-fry for 1-2 minutes.
  4. Add tofu and stir-fry for 3-4 minutes until lightly browned.
  5. In a small bowl, mix together soy sauce, chili sauce, sesame oil, water, cornstarch, salt, and pepper.
  6. Pour the sauce mixture into the wok and stir well.
  7. Add cooked lentils and simmer for 10 minutes, stirring occasionally.
  8. Remove from heat and let it rest for 5 minutes.
  9. Serve hot with steamed rice or noodles.
