Red Rice

Red rice gets its vibrant color from anthocyanins, which are natural pigments found in the outer layer of the rice grain. These pigments also have antioxidant properties.

Rinse the red rice thoroughly.

In a large pot, bring water to a boil and add the red rice. Cook for 20 minutes or until tender.

In a separate pan, heat olive oil and sauté the onion and garlic until fragrant.

Add the red bell pepper, carrot, and frozen peas. Cook for 5 minutes.

Stir in the tomato paste, paprika, cumin, salt, and black pepper.

Add the cooked red rice to the pan and mix well.

Cook for an additional 5 minutes, allowing the flavors to blend.

Remove from heat and stir in cilantro and lime juice.
