  1. Wash the collard greens thoroughly and remove the tough stems.
  2. Chop the greens into bite-sized pieces.
  3. Heat olive oil in a large pot over medium heat.
  4. Add the onion, garlic, and red pepper flakes to the pot and sauté until the onion is translucent.
  5. Add the collard greens to the pot and cook for 2-3 minutes until they start to wilt.
  6. Pour in the vegetable stock and season with salt and black pepper.
  7. Cover the pot and simmer for 20-25 minutes until the collard greens are tender.
  8. Stir in apple cider vinegar.
  9. Remove from heat and let rest for 5 minutes before serving.
