Wash and chop the collard greens.

Heat olive oil in a large pot over medium heat.

Add onion and garlic, sauté until fragrant.

Add collard greens and red pepper flakes, cook until wilted.

Add vegetable broth, cover and simmer for 20 minutes.

Meanwhile, cook rice according to package instructions.
