Kitchari is a traditional Ayurvedic dish known for its simplicity and easy digestibility.

  1. Rinse the rice and moong dal under running water.
  2. In a large pot, add water, rice, and moong dal. Bring to a boil.
  3. In a separate pan, heat ghee and add cumin seeds, mustard seeds, turmeric powder, asafoetida, ginger, and green chilies. Sauté for a minute.
  4. Add this tempering to the pot of rice and dal. Stir well.
  5. Add salt and cover the pot. Simmer for 20-25 minutes until the rice and dal are cooked.
  6. Let it rest for 10 minutes before serving.
  7. Garnish with fresh cilantro and serve hot.
