Red lentils are a great source of plant-based protein and are commonly used in vegetarian and vegan dishes.

Rinse the lentils under cold water.

In a large pot, heat some oil over medium heat and sauté the onion, garlic, and ginger until fragrant.

Add the tomatoes, carrots, lentils, vegetable broth, cumin, coriander, turmeric, cayenne pepper, salt, and black pepper to the pot. Bring to a boil.

Reduce the heat and simmer for about 25 minutes, or until the lentils and vegetables are tender.

Use an immersion blender or a regular blender to puree the soup until smooth.

Stir in the fresh cilantro and lemon juice.

Let the soup rest for 5 minutes before serving.
