Spiced Parsnip Soup
Parsnips are a great source of dietary fiber and vitamin C.

Peel and chop the parsnips, onion, and garlic cloves.

Heat olive oil in a large pot over medium heat.

Add the chopped onion and garlic cloves, and sauté until softened.

Add the ground cumin, ground coriander, and ground turmeric. Stir well.

Add the chopped parsnips and vegetable stock. Bring to a boil.

Reduce heat and simmer for 20 minutes, or until parsnips are tender.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Return the soup to the pot and stir in coconut milk, lemon juice, salt, and black pepper.

Simmer for an additional 5 minutes.

Serve hot, garnished with fresh cilantro.
