  1. Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine almond flour, coconut flour, baking soda, cinnamon, ground ginger, nutmeg, and salt.
  3. In a separate bowl, melt the coconut oil and mix it with honey, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined.
  5. Fold in the raisins and walnuts.
  6. Use a tablespoon to scoop the dough and form it into cookies. Place them on the prepared baking sheet.
  7. Bake for 10-12 minutes or until the edges are golden brown.
  8. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
  9. Transfer the cookies to a wire rack and let them cool completely.
