Lentils are a great source of plant-based protein and are commonly used as a meat substitute in vegetarian and vegan dishes.

Rinse the lentils and cook them according to package instructions. Drain and set aside.

Grate the carrots and finely chop the onion and garlic cloves.

In a large mixing bowl, combine the cooked lentils, grated carrots, chopped onion, chopped garlic, ground cumin, ground coriander, paprika, chili powder, salt, black pepper, breadcrumbs, and flour. Mix well until all ingredients are evenly combined.

Form the mixture into burger patties, approximately 1/2 inch thick.

Heat olive oil in a frying pan over medium heat. Cook the burger patties for about 4-5 minutes on each side until golden brown and crispy.

Toast the burger buns.

Assemble the burgers by placing a lettuce leaf, tomato slice, avocado slice, and a lentil carrot patty on each bun.
