  1. Rinse the rice under cold water until the water runs clear.
  2. In a large pot, heat the vegetable oil over medium heat.
  3. Add the onion and garlic, and sauté until translucent.
  4. Add the carrot and cook for 2 minutes.
  5. Add the curry powder, turmeric powder, cumin powder, salt, and black pepper. Stir well.
  6. Add the rinsed rice and stir to coat the grains with the spice mixture.
  7. Add water according to the rice package instructions.
  8. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
  9. Remove from heat and let it rest for 5 minutes.
  10. Fluff the rice with a fork, then add the frozen peas, fresh coriander, and lemon juice. Stir gently to combine.
  11. Serve hot and enjoy!
