Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until translucent.

Add chopped kale and cook for 5 minutes, stirring occasionally.

Add vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.

Meanwhile, drain and press tofu to remove excess moisture. Cut tofu into small cubes.
