Green rice gets its vibrant color from the spinach and herbs used in the recipe. It is not only delicious but also packed with nutrients!

  1. Rinse the rice thoroughly and soak it in water for 30 minutes.
  2. Heat ghee in a pan and add cumin seeds. Once they splutter, add finely chopped onion, garlic, ginger, and green chili.
  3. Sauté until the onions turn golden brown. Add turmeric powder and mix well.
  4. Add spinach, green peas, cilantro, and mint leaves. Cook for a few minutes until the spinach wilts.
  5. Drain the soaked rice and add it to the pan. Mix well with the vegetables.
  6. Add salt and water (1:2 ratio of rice to water). Bring it to a boil, then reduce the heat to low, cover the pan, and let it simmer for 15-20 minutes or until the rice is cooked.
  7. Once the rice is cooked, remove it from heat and let it rest for 5 minutes.
  8. Fluff the rice with a fork and drizzle lemon juice over it. Mix gently.
  9. Serve hot and enjoy!
